It's still early days - most of what's available so far inside Cydia is unix tools & a few cosmetic skinning things. A popular one is summerboard, in which you can theme your iphone with custom backgrounds and icons.  But yeah, there are tons of apps on installer so it would be beneficial to be able to pull apps from installer and the app store.  That's why a jailbreak for 2.0 firmware and iphone 3g is important to many people, even if they are using the carrier designated by apple. Because you pay $75 a month for 1000 minutes, unlimited nights and weekends, unlimited data, unlimited text.  That would be right around $120 for AT&T.
