Note the individual finger movements shown in the second part of the vid are not done alongside the doctor moving his fingers. My guess is that the sensors placed on the arm are not sensitive enough to pick up the subtleties of such fine, individual finger movements. I think the hand is in "demo mode" for this latter segment.
