Am I understanding correctly though that the "S-Class" UI runs on two different OS's - one which is LG's own proprietary one, and the other of course being Windows Mobile 6.5?

Because if you look here - http://www.engadget.com/2009/02/16/lg-arena-km900-hands-on/ the interface is silky smooth and extremely clear. What a shame LG couldn't optimise WinMo a bit further.
