Download iPhone / iPod IPSW Manually, Restore via iTunes (How-to)
1 - Launch iTunes (make sure iTunes is up-to-date)
2 - Connect device to computer
3 - Select your device in the list (e.g.: Filip’s iPhone)
4 - click the “summary” tab
5 - hold the Alt key (on Mac OS X) / the Shift key (on Windows) and hit “restore” (as shown in the screenshot below)
6 - iTunes will show a dialog allowing you to select the IPSW file you want your device restored to
7- select the IPSW firmware bundle you want to restore to and hit “choose”
8- be patient and wait for the installation process to be completed by iTunes

I was impatient, I followed this, and it worked great, photos/contacts were all there! music was the only thing that had to be re-loaded. it's nice to be able to keep using the phone while it syncs now, but it does take longer...

Does this work around only work on Mac? Got a zip file but now ipsw in there, but can see some .dmg's - god I miss my mac.
the only problem for me so far is a bug in "music" on my ipad 1 64gb 3g i'm no longer able to control the playback speed of podcast and it's stuck at 1/2 speed ! major problem for me.
I'm having the exact same issue. My podcasts are stuck at half speed and there is no way to choose a different setting. This is a big problem for me also.
Same issue here as well. The only way I could ever imagine keeping up with the amount of podcasts I listen to is to listen to them at double speed, not half speed. The echo in half speed makes it near impossible to listen to.
Now as a temporary alternative I found an apps called popspeed, contrary to others podcast apps it can files already in the iPad but the interface is limited and don't work in the background. I pray of a fix soon with ios5.x.x
I'm doing a fresh restore using my paired computer, hoping that I can restore my data from the iOS4 backup to it. If not, guess I lose out on my game saves.
Fresh restore failed on the first attempt. I'll repeat: doing a clean restore of iOS5 failed.
In a strange turn, even failing all that, I check my phone to see that I'm still running 4.3.5 perfectly.
Finally got it. Didn't use the IPSW file, but while I had already updated OSX to 10.7.2, there was another update that I missed. After that, iTunes loaded the new iOS perfectly, then restored my apps while the phone was still running. Kinda interesting to be able to keep using the phone during sync.
2 devices attempted with only one working right now. The working one was after multiple attempts and multiple 3200. The second iPhone is 'restoring' back to original after the upgrade was unable to restore the image. The iPad version is currently downloading on another computer and says it's going to be 3 hours. It's looking like a long night. :-)
Update: Both iPad's went without any issues. Not sure if it's because demand went down or just dumb luck. The iPad 2 is not seeing any issues but our iPad is having Safari problems. iPad and iPhone4 are both having mail crashing issues but this is all stuff for a different question. LOL
Upgrading both my iPhone and iPad took multiple attempts. The iPhone would not update until I downloaded and installed the latest security patches for the Mac. After that I ran into the restore issues other people reported with my iPad. After 3 or 4 attempts, it worked.
I haven't installed it yet, but saw a video by Scott Johnson from Appslappy showing that third-party apps are not launching after the upgrade. I may hold off until some of these bugs are worked out.
I had the same problem with my iPod as well but that was due to an incomplete restore due to my having to shut the power off on my laptop. Apparently iTunes freaked out about something while doing the restore. I fixed the launching issue by just plugin in the iPod after rebooting and letting it finish the restore.
I have a couple friends who are having trouble updating with same error code as ranhalt.
I just downloaded the GM a couple of hours before the official build came available, so I wouldn't be error 3200'ed. :-)
I got error 3200 about 10 times then I got error 3014 once then it finally updated to iOS 5. I just kept trying and trying. After each error, I just click update again. Finally went. Just so you all know.

All upgraded now but had lots of problems. iPhone & iPad, started to try upgrade as soon as it was released, no problem downloading the update, but when it came to apply, got a worrying error about not being able to restore and pointing me to a completely useless knowledge base article. This had 5 steps all of which suggested the problem was my fault, Upgrade OS X, Upgrade iTune, disconnect other USB devices, accusation that I had jailbroken (I haven't) and the ultimate, reboot!.
Careful observation of the status window at the top of iTunes showed that the update was actually failing when it tried to contact Apple's activation servers.
Tried again at 6:00 GMT and it worked - it's a good job that my Broadband is not capped though, as between two macs, 1 iPhone and iPad, I have downloaded around 4GB (including the iPhoto upgrade,) - still need to upgrade the Apple TV, but I think I'll save that for later.
I just attempted to upgrade my iPad 2 to the iOS 5 final release (was running an older beta and not the GM) and just apparently lost everything. It tried to restore from a previous backup, but it didn't do anything. Lost all folders, apps, settings, everything on it. Sigh.
Guess it's nice to start from scratch every once in awhile. But really, this is really obnoxious.
I had a similar problem. Just give it a few more tries. They authorization servers at Apple are apparently overloaded.
I had issues earlier in the day but when I tried later in the evening (about 6 or 7 pm) I was able to upgrade both my iPhone and iPad without issue other than the length of time the upgrade took after the update had downloaded. It took me about 6 hours total.
iPhone 3Gs crashed during update so I had to restore from backup, resync, fix my apps / folder / settings then upgrade... after all that the IOS 5 upgrade hosed all my app settings and folder structures. Fixed everything... then plugged into my macbook pro (upgraded with iMac) so I could get all my podcasts off the laptop and the MBP hosed my apps settings again. Ugh. Long night.
I used it as a chance to remove any apps that I did not really use in prep for the switch to the iPhone 4s tomorrow morning.
iPad updated directly from my MBP and had no issues... retained all settings / folders.
Besides insane download speeds yesterday, I'm all good here.
I keep getting error(-43) during the backup part of the upgrade. tried multiple times with no success. HELP!!!!!!!!!
I have same prob can't reduce speed, it double now BUT only with he music app if I use iplayer from bbc audio is normal but no speed change any on ?
