I've found that my iPhone does work better with the 2.1 update. I'm getting more accurate signal readings and a lot less dropped calls. Also, my keyboard is finally not freezing! Apps and such seem to not be crashing like the 2.0.2 firmware. So all I can say is that 2.1 is a lot better for me.
I see your point.. but I do a lot of Video Editing and work with HD and prefer using the Mac system a lot more than Windows. Final Cut Studio, in my opinion, is the best editing program I have ever used. Love it.
