I had cuy when I was there as well, but mine was cold by the time it got to me. I'll second very little meat and mostly bones, which leads to one of Peru's national past times, sucking on bones. Specifically sucking what you can off the bones, then cracking them open to suck marrow out. As for taste, the closest I can say is a mild rabbit.

Alton Brown's Sweet Potato Waffles uses the same technique to lighten the batter. It would be interesting with pancakes...although I really prefer waffles.
