(I didn't read through all of the threads above so excuse me if someone has already pointed this out). To force a stack to display a particular icon, you can create a fake "app" in Automator and then change its icon to say the "Applications" folder icon (using get-info and copy/paste) and then rename the fake app to "AAA" or something else that sorts first. Make sure that the stack is set to display sorted by name if you do this.
Disclaimer: I had to remove the Applications folder from the dock and re-add it after I did the above for this to immediately work.
Anyway, I hope this helps someone... I know that it annoyed me until I figured it out.
