If you read the source link, the official Sanyo press release lists those prices. It doesn't mean retailers have to sell them for that price, but once they become more common the price will come down.
The PR bit about churn is bs and misdirection. The reason churn is so low is because people are locked into contracts and can't (easily) use their iPhone on any other carrier. As soon as the iPhone is available at all carriers and peoples' contracts run up AT&T is going to eat their words.

The business could just buy an iPod touch or a company iPhone to use for this - no one says you have to hand your personal iPhone over.
Everyone tripping about "skimming" and scammers are ridiculous. This little tool doesn't make it any easier for anyone who really wants to steal your CC info. About $50 on eBay, or maybe $20 in parts if you can solder, nets you a card reader to get the same information.

Sure, this might make it easier for people who were incapable before, but chances are if they were that incapable they're gonna get caught anyways.

Is having to wait a week or two for a minor update really a big deal? How badly did you really need the 3.0 features when it came out? More so than you need GV or other jailbreak apps?

To me it was definitely worth waiting because of SBsettings, Cycorder, PDANet, etc.
Exactly. If you really do rely on Google Voice why don't you just jailbreak, install it and call it a day?
