That's a good question. This might be different from how repairs/exchanges for iPod's work, but when Apple released the new iPod's post 3G versions, if you had a 3G or earlier model iPod, the Apple store still had a few in the back for those who had these models to replace if someone were to have problems. I would assume this would be the case for the first-gen iPhone's. I could be wrong though.
@Andrew Maybe, I thought they were sold out in most places for the 8 gig. Given that I paid like $399 for this thing (if I recall), the least they could do is give me the HALF PRICE 3G 8 gigger...
Oh well, to be honest, most of the goodies I understand fall under the software side of the house... 3G and GPS are nice, but would change my day to day iphone life little. ActiveSync and other usability changes, that is what I am really looking for.
I'm in the same boat as you, except mine (8GB, purchased for $630 in mid-July 2007) is already broken. The camera won't work and applications crash all the time, despite my earnest efforts at both soft and hard restores, as well as complete reloading of the software.
I am sure that Apple has a few 8GB and 16GB first-gen iPhones "in the back" to replace people who still have AppleCare on their old phones.
I, however, am determined to get them to replace mine with a 16GB iPhone3G. I have had to send my iPhone in for repairs and I've never been able to get push email working through Yahoo! Mail or through Gmail. I think there are serious problems with the power supply, which is why it isn't operating properly. They are bound under warranty to replace it with an 8GB first gen iPhone (which was $399) so considering that I paid $600+, they should replace mine with a $299 16GB iPhone3G. If not, I'll be SERIOUSLY disappointed.
I would say "NO". The bottom row of the touch sensor went out on my 4GB 2 weeks ago. I was hoping to get a free upgrade to an 8GB model, but the apple store swapped it out on the spot with a 4GB model that seemed new. At least I got a clean start on many months of normal wear-and-tear scratches.
More than likely, they will send you back an iPhone < 2.0 if available. You'd have to purchase a < 2.0 iPhone after that given date to get a 2.0 I would assume.
HP's Jon Rubenstein told us that his company wanted to veer in a new direction, and veer it surely did -- the HP Veer 4G will arguably be the smallest fully-functional smartphone on the market when it goes on sale May 15th.

What happens if my 8 gig iPhone 1.x breaks? I have AppleCare. Do I get a G3 8 giger?

A 3G iPod? Oooohh, a third generation iPod!

Nope. They keep refurbs around for a reason...
