After the avalanche of tech blogs, and commentators, telling us that touch-screen desktops are stupid and that people's arms will get tired from using them, they are going to all of a sudden say it's perfectly cool just because Apple does it?
If you sit at a traditional desk and hold your arm up to touch your screen, your arm will get tired after just a few minutes. Touchscreen computers would have to be similar to drafting tables in order to be comfortable.
If it was level on the back of the new iMacs (so they could lie flat on a table), then a touchscreen would be ideal. Semi-portable Microsoft surface/HP touchsmart/iMac trybrid renderings- go!
But if the machine were flat on the table, it wouldn't be ergonomic for your neck/back. You'd have to hunch over. Granted, it would last longer than holding your arm up to a traditional screen, but not long enough to be of much practical use.
"I'm a college student looking for a new laptop, but almost all of my media I receive digitally. I'm looking for a laptop, not a netbook, without an optical drive, and budget sensitive. The optical drive will just be a waste of space, when I can have thinner laptop. What's out there?"

Nevermind.
