Yeah, the iPhone UI is mostly great and really slick, but I really hate the homescreens. Way too many little icons crammed into those screens. I prefer the Android 'desktop'-like homescreen by a mile. It's much cleaner. Whenever I look at my friends' iPhones I drown in the clutter.
@Danny Seriously, I'm not sure what really needs to change. I'm all for new features and tweaks, I just currently don't really have a wish list because nothing major jumps out at me as needing attention.
I agree mate. Notifications suck, and I'd take at least a 'save state' mode for applications if Apple decide not to go the full hog and actually add multi-tasking. I'd also like to see some useful information... as opposed to what apps I have. Finally, they really need to add profiles - my old phones could do this, what gives?

Everyone is still trying to catch up to the iPhone UI. There is nothing substantial about the other UIs that improves upon the ease of use of the iPhone.

Not going to happen.
Apple relies on the brand recognition of that OS's look.
Any change will signal two things:
#1 They acknowledge it is out of date.
#2 Other platforms have made strides to the point where it no longer stands up well to them anymore.
Bonus #3 They risk any revamping not taking well with the public. Any radical change will put them back to square 1 against everyone else.
That is why the iPod interface never changed significantly from Gen1 to the iPhone.
