AdiBags My bag addon of choice, Adibags, was heavily represented in the comments. I was proud of little ol' AdiBags, considering I used to be an ArkInventory man, which is still an amazing addon. I just didn't want to make my own slew of changes as time went on. AdiBags is my bad mod of choice for people who want something with enough customization to keep you happy but with an ease of use that rivals most addons.
User Blacklight is still an ArkInventory fan, so I'll shout-out Ark as well. Remember, ArkInventory is the advanced version of a bag mod -- it might take a little bit of time to learn, but the payoff can be amazing.

TidyPlates How could you say no to TidyPlates? I'll let commenter djsuursoo spell it out for you, because he says what I'm thinking:
hands down one of the most useful addons out there. a simple heads up threat-gauge that works across multiple mobs in real time, dot/debuff tracker, and can be configured for heals/dps/tank pretty quickly and it's bloody great.

Ah, GupPet. My favorite pet and mount addon ever, sadly lost to the non-updating gods. Fear not, I will be helping you GupPet faithful update your addon for new mounts and pets that come into the game, as I have done before. Even though it requires a little bit of elbow grease from the user, GupPet is still the premiere addon for pets and mounts because of the randomness controls. Please, please, please someone update GupPet.

I'm surprised ReforgeSaver hit the comments. I've talked about ReforgeSaver before and have had it installed for awhile. The real-use case scenarios of ReforgeSaver have come, in my experience, from PVPers who do lots of reforging between raid nights and extended PVP play sessions. Need to save lots of reforging profiles and then have it all done with the click of a button? Get ReforgeSaver.

One of my favorite addons of all time, SLDataText provides loads of information in a simple text interface. Extremely customizable and easy to use, SLDT is one of those addons I had to use before I figured out all of its use cases. Once I did, SLDT became a constant in every UI since. Armor percentages, time, lag, and FPS are just easier to comprehend as numbers for me versus an abstract visual representation. SLDT lets me have all that and more.

Commenter Freedom suggested Conjured Announcer, a simple addon that announces to your group or raid when you have conjured a repair bot, feast, cauldron, ritual, or refreshment portal. Letting your friends know when stuff gets dropped makes for smoother groups and raids. Plus, no one can argue that you didn't let anyone know the feast was down. Who am I kidding? They will still argue.

If GupPet isn't your thing or you're just looking for a companion pet addon, PetLeash is a solid choice. PetLeash always makes sure you have a little companion hanging out at your side at all times, desummons pets when you stealth or go invisible for one reason or another, and lets you set certain pets to come out at certain locations.
