Yesterday, I answered a question about shoulder enchants and their availability in MoP. I told the commenter that only scribes would have access to shoulder enchants. Turns out the answer was all wrong because a.) I was thinking of head enchants, which are gone, and b.) I was also thinking of epic shoulder enchants, which only scribes can use. Shoulder enchants will still be available for common folk, just not the best shoulder enchants. My bad! Thanks to commenters like Ravyncat1 for the correction.

Yes, leveling is normally accelerated a bit on beta to encourage people to move through (and therefore test) the content. This has been the case for the last several expansion betas, as far as I remember.

I'm a little confused regarding account wide achvs. My main is short 2 achievements -shocking, and Denyin' the scion (both 10 player) to get Glory of the raider (10 player). On one of my alts I have Shocking and on another I have Denyin'n the scion. So once the next patch or Mop comes out, will my main get this achievement and if so what toon will get the 25 points it rewards?

All of your characters will get the achievement. Achievements earned that are in a meta achievement are shared by all of your characters -- statistical progress, such as number of iron dwarves killed for Iron Dwarf, Medium Rare, is not. This goes for almost everything except for certain PvP statistics like honorable kills, which last I heard are shared.

How are mount collecting achievements going to work for people with characters on both factions? Do all mounts count towards it, regardless of whether or not you can actually use them? Also, I have a horde character with an albino drake, will my alliance ones get to use it?

Number of mounts is shared between characters, even characters on opposite factions.

Yeah! You can just, like, walk in. The ZG portal is in STV, and the ZA portal is in Ghostlands.

Pets and mounts are going battle.net account wide in MoP. Now I have a european server account on my battle.net account and a us on. Does this mean my mounts from my original european server toon will be shared with my current US one as well?

Unfortunately, no. Accounts in different regions can't talk to each other at all because the infrastructure is different.
