In our time spent writing dojo updates, we've been frequently wowed by stages boasting an impressive degree of interactivity. That said, Luigi's Mansion might just take the (entire) biscuit (tin). Four spindly pillars are all that support the eponymous mansion, and once they've been battered into submission, the entire structure is reduced to naught but rubble.
You can't keep a good poltergeist-infested dwelling down, however; give it time, and the house will reassemble itself. Very nifty, and it's not hard to unlock, either -- use Luigi in three brawls, and the keys are all yours.
