The subject in question for this particular video is Venetian "titan of industry" Emilio Barbario, a man whose assassination has been planned by the Venetian Thieves Guild for many years. Let's be honest though -- you're just looking to watch Ezio leap precariously around Venice and stab a bunch of dudes. It's fine! So were we!
